Kimchi, the Korean condiment made with cabbage and hot peppers is said to have great health benefits, and lots of vitamins.

Does anyone know if kimchi is considered raw?

I used to live on rice and kimchi one or more times a day. Of course rice is cooked, but I was thinking of including brown basmati rice and kimchi as a standard for lunch or supper. Would this be a well-combined meal?

Mmm, I've had kimchi! If you're not going 100% raw I don't see why you can't include this on your menu. :) Cabbage raw and lightly cooked is immensely good for you. Also sauerkraut or fermented foods are great for you too.

HI!

well kimchi is raw depending how you prepare it. My mom is korean so we make our own kimchi and I make it with all organic raw ingredients... I dont even cook the daikon nor cabbage at all just soak it in chili sauce and loads of vinegar. If you buy the store bought jar kinds you shoudl be careful cause lots of them are loaded with MSG and sodium to preserve shelf life PLUS they add some fish sauce too for enhanced flavor. Kimchi comes in a wide variety so you should look into the specific kind and specific ingredients you like as well =).

My friend is very fond of kimchi and she just prepare it herself.
I think raw cabbage is not bad. As long as the rice is cooked.

Oooh, Raw Cabbage (just one ounce daily) is the #2 cancer fighter!! It's great! Garlic is #1. I could have a love affair with a clove of garlic. ;)

I'd love a recipe for Kimchi if anyone out there has one :) I used to make it years ago from a recipe a Korean friend gave me but that recipe was lost long ago. I'm on day 4 now and knowing I could have some Kimchi, homemade no less, in a short while would be a great inspiration to keep me on track!
